The founders wanted their restaurant to reflect conviviality. With the place serving as a gathering place for friends and families, where laughter flows as freely as the gumbo (tradition dish).
They envisioned a chill atmosphere, capturing the laid-back surf culture, where there's no rush—just good vibes and great food. The restaurant needed to be a celebration of the French Quarters' tradition and cuisine, and attract families and young people of Biarritz.
