Mediterranean fried rice with eggs
Ordering meals online might always seem like a good idea when you’re busy or just on the go, but this easy to make and quick recipe might just change your mind. Apart from just saving time and money it’s packed with everything your body needs. Whole grains contain insoluble fiber, which helps protect against heart disease. 
What you will need: 
3 tsp (45ml) canola oil or avocado oil 
1 onion, chopped
2 garlic cloves, chopped 
3 spring rosemary 
1 ½ cups (375ml) brown rice, cooked 
3 anchovies, chopped 
1 packet (14) vine tomatoes, roasted
1 packet (200g) black olives, pitted 
Salt and milled pepper 
4 eggs 
Nice to have:  
2 tsp (30ml) capers, chopped 
8 sundried tomatoes, chopped. 
How to make Mediterranean fried rice with egg (serves 4) 
Heat half the oil in a pan and sauté onion 
Add garlic and rosemary and fry for a minute 
Add rice and fry 
Stir in the remaining ingredients, except eggs 
Heat remaining oil in a frying pan and fry eggs to your liking 
Serve rice topped with eggs.

Recipe ingredients: 
A hearty winter fare ☺
1 ½ packets (1.5kg) baby potatoes 
1 packet (300g) ready prepared leeks, rinsed and sliced
1 bunch kale, trimmed and chopped 
Knob of butter 
Olive oil 
1 cup of (250ml) milk 
1tsp (15ml) corn flour 
1 tub (250g) sour cream 
250g blue cheese, Crumbled 
Salt and milled pepper 
Handful sage leaves ½ packet (50) 
Walnuts, crumbled 
Crunchy green salad with vinaigrette to serve. 
How to make potato, kale and blue cheese gratin with walnuts (serves 4) 
Cook potatoes until tender, then halve each potatoe
Sauté leeks and kale in butter and a glug of oil until soft
Preheat oven to 180C  
Add milk and corn flour (mixed with a little cold water) to pen and cook until thickens
Stir through the potatoes, sour cream and half the blue cheese, season.
Spoon into an ovenproof dish, top with sage, nuts and remaining cheese.
Drizzle with oil and bake for 20% minutes until golden and bubbly Serve with salad.
