Food waste that is sent to landfills does not break down and releases methane gases that are harmful to the environment... compost is a natural asset that's overlooked and helps cultivate healthier crops (which help lower CO2 levels). Many businesses and residences do not participate in a compost program (nor is one available in their area/zip code). Additionally, many businesses and residences (who choose to compost) don't have the time or resources to physically transport their scraps to a composting facility.
