Update the store's theme to migrate all features over from the old version into the new updated OS 2.0 release and preserve Apps and Theme Customizations.
This requires rebuilding the pages in the Theme customizer for OS 2.0 syntax and migrating all sections to the newer versions.
The complexity of the job varies from theme to theme, store to store, although the process is always the same.

Process
I start with a theme analysis looking over the usage of custom templates, pages and Apps - as this will increase the complexity of the migration.
The header, navigation and footer are the first part I work on migrating to ensure they are setup the same throughout the new theme.
Next the homepage, collections and productpages are migrated over to the new syntax using the theme customizer for addition of the theme sections.
Lastly I rebuild any of the custom pages and preview with the client.
Once the client is happy with how everything is looking, we move the theme live and perform the App updates, due to how the Shopify app system works.
Timeline
2 to 3 days on average, although this does depend on the complexity of the theme and also to allow time for revisions and iterations, sometimes it can take a week or more.
