Accomplished Vegas Pastry Chef to Open Healthy Dessert Shop

Before Diana Dimitrova was a pastry chef, she was a jewelry maker. Pastries first caught her eye on a trip to Las Vegas 15 years ago, when she spotted the chocolate fountain at the Jean Philippe Patisserie.
“I was so impressed,” Dimitrova told What Now Las Vegas. “The pastries looked like little jewels, but edible. So when I went back to Los Angeles, I decided to enroll in the baking and pastry program in Le Cordon Bleu in Pasadena.”
Since then, Dimitrova’s career has taken off, landing her at a Gordon Ramsey restaurant, in the Hakkasan Restaurant at MGM Grand, then finally, back at Bellagio.
By the time Dimitrova arrived at Bellagio, Jean Philippe’s Patisserie had left the building. As the new Assistant Executive Pastry Chef, it was her turn to craft the jewel-like sweets that once caught her eye.
Throughout these varying roles and locations, Dimitrova was watching carefully and learning from some of the world’s best pastry chefs.
Now, she is putting these skills to the test: Nutriente Pastry Studio will offer masterfully crafted, health-conscious, and environmentally-friendly desserts. The brand-new patisserie is set to open this coming Spring at 7225 S Durango Dr., Suite 101.
“I’ve always been trying to make healthy desserts, that’s my passion,” Dimitrova said. “I love to create seasonal pastries and to play with seasonal organic farm ingredients that are the most flavorful and fresh. Now with my own business, I can really focus on that. No additional sugar, just pure, organic, and beautiful pastries.”
