With one caveat: this work is creative and takes time and effort, so I will not be able to get a complete project to you if you need it next Monday.

Yes, typically, I do not create logotypes by modifying existing fonts. With more than 10 years of experience drawing custom letters, I know exactly what I want and how to make it. Modifying fonts for logos is also oftentimes not permitted by font designers.
There could be exceptions — if you're building a brand system that needs to be editable, or if your logotype is using foreign scripts, like Kanji or Arabic, that I'm not directly familiar with.
No, I do not. Since I know exactly what I'm doing, it's easier and faster for me to execute the work myself instead of poking at prompts without a full control over the final result.
