The editorial collage is beautiful and very different from other sites. But my vote goes for the minimal approach, something about the typical structure helps me to analyze the messaging and navigation.

Minimal for me. It communicates the message more clearly, while the editorial version is visually interesting but slightly more distracting.

i think the minimal approach would be perfect as it's easy to understand and most builder supports this type of website building (I can see you have mentioned Kajabi)
