What systems have you deployed in the past?
RAMP, SBC 5400's, and PSX (using VMware and KVM). GSX will be end of support soon and just had experience for some years on the operational point of view.
How long does it take to deploy a Ribbon VM and configure it?
RAMP is usually the fastest (Migration from EMS to RAMP is also quite straightforward). SBC and PSX are the most intricate devices requiring more settings depending on your business needs. To speed it up, having the required software and licenses would be ideal.
What operation support systems are necessary/recommended?
For accounting, monitoring, automated scripts, and backups. All are viable to use with Linux servers and integrate well in a Ribbon environment.
