Either will sign the final build with your private store key or not The final apk or bundle will be delivered according to your need.
iOS Build
Xcode archive will be delivered so you can validate it and upload it to the store via xcode
Source Code & 3D Assets
All the development sources are on private repo , either its hosted on your domain or any git services you would prefer like Github, Gitlab...etc
